  • For the filling of the charlotte: Blend the cream cheese, evaporated milk, condensed milk, lemon juice, and lemon zest until fully combined. Set aside.
  • Cover a pastry ring with cling film to form a base, place acetate strips around it, and cover the base with vanilla cookies until completely covered. Add the filling and place a layer of cookies around the ring, this way you will limit the circumference. Then, continue forming the layers, add some filling, place another base of cookies, and then some more filling. Repeat the process until you have between 6 and 8 layers, but remember that the last layer must be filling.
  • Refrigerate the lemon charlotte for at least 4 hours or until solid.
  • Unmold the lemon charlotte, decorate with crushed vanilla cookies, and cover the surface with lemon zest.
