The Classic Creme Brulee

Creme brulee is a typical French dessert that consists of a custard topped with caramelized sugar. Every chef must have made a good creme brulee at least once in their life.

  • 2 1/3 cups whipping cream
  • 1/6 cups whole milk
  • 1/6 cups sour cream
  • 1 vanilla bean
  • 8 egg yolks
  • 1/2 cups sugar
  • 9 tablespoons sugar

  • Preheat the oven to 200 degrees Celsius. Prepare six 3/4 cup molds and place them in a large baking dish.
  • In a medium saucepan over low heat, combine the heavy cream, whole milk, cream, and the piece of vanilla.
  • Let the creams boil, cover the saucepan, remove from heat, and let cool for 10 minutes. Remove the piece of vanilla.
  • In an electric mixer, beat the egg yolks and sugar. Gradually add the cream mixture and incorporate well with the mixer.
  • Pour the custard into the 6 molds. In the baking dish, add water until it covers half of the cream molds.
  • Bake the custards for 35 minutes, remove from the oven, and refrigerate for 2 hours.
  • Preheat your oven's broiler. Sprinkle the custards with the 9 tablespoons of sugar. Bake for approximately 3 minutes or until the sugar has melted.
