Three Milk Cake with Churros

  • 4 cups water, for churros

  • 375 grams butter, for the cake
  • 1 1/4 cups sugar, for the cake
  • 1 cup condensed milk, for the cake
  • 11 eggs, for the cake
  • 1 1/2 cups flour, sifted, for the cake
  • 2 teaspoons baking powder, for the cake
  • 2 cups condensed milk, three milks
  • 2 cups evaporated milk, three milks
  • 2 cups whole milk, three milks
  • 4 cups dulce de leche, for covering the cake

  • Preheat the oven to 180° C.
  • Heat a small pot over medium heat with the water until it reaches boiling point, add the salt, sugar, cinnamon stick, nutmeg, and vanilla extract, remove the cinnamon, add the flour all at once and mix well until a thick dough forms, remove from heat and cool.
  • Place the mixture in a piping bag with a star tip. Drop the mixture to form the churros into hot oil. Fry for 3 minutes or until cooked.
  • Drain on paper towels and roll in sugar. Using a skewer, hollow out the churros and fill with dulce de leche. Set aside.
  • For the cake, cream the butter with the sugar, add the condensed milk and the egg one by one, gradually add the sifted flour and baking powder. Incorporate until you obtain a homogeneous mixture.
  • Divide the mixture into two molds, one larger than the other, and bake for 30 minutes or until cooked. Cool and unmold.
  • For the three milks, combine the condensed milk with the evaporated milk and whole milk. Mix and soak the cakes, refrigerate, and soak again. Repeat until you obtain a moist cake.
  • Place the small cake on top of the large one and cover with a thin layer of dulce de leche. Refrigerate.
  • Decorate the cake by completely covering it with churros, place a ribbon around it.
