Toasted Almond Cake

  • 90 grams butter
  • 1 cup sugar
  • 3 eggs
  • 1 cup flour
  • 1 cup almonds, toasted and ground
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1/2 cups almonds, whole
  • 1 tablespoon almond essence
  • 1 tablespoon vanilla essence

  • Preheat the oven to 350 degrees and beat the softened butter with the sugar.
  • Add the eggs one by one until they fluff up a bit, then add the almond and vanilla extracts.
  • Sift the flour with the baking powder and a pinch of salt.
  • Combine the dry ingredients (flour, baking powder, and salt) with the bowl containing the eggs and extracts, and beat on low speed.
  • Add the toasted ground almonds to the mixture.
  • Bake for 30 minutes until a toothpick comes out clean and the texture is soft but firm.
  • Unmold, let cool, and decorate with whole almonds.
