Traditional Chongos Zamoranos

Delicious and traditional dessert; chongos zamoranos from Michoacán, a recipe from the colonial era created in the convents of Zamora, this rich dessert is made from curdled milk with a sweet touch of sugar, flavored with cinnamon. Prepare them with us; they are wonderful.

  • 8 cups whole milk
  • 3 cups sugar
  • 3 sticks cinnamon, for preparation and decoration
  • 3 tablespoons piloncillo, grated
  • 2 limes, only the juice

  • Heat a pot with milk, add sugar, cinnamon, and piloncillo, heat enough without reaching boiling point so all the ingredients release their aroma.
  • Add the lemon juice, incorporate it into the mixture to curdle the milk.
  • In a small pot, cook the chongos until they take on an amber color. Do not stir for 2 hours.
  • Remove the chongos from the pot, strain, and serve with a bit of the liquid, accompanied by some cinnamon sticks.
