Ingredients

10 servings
  • 8 cups of whole milk
  • 3 cups of sugar
  • 3 rajas of cinnamon for preparation and decoration
  • 3 spoonfuls of piloncillo grated
  • 2 pieces of green lemon just the juice

    Preparation

    Heat a pot with milk add sugar, cinnamon, brown sugar, heat enough without reaching boiling point and all ingredients release their aroma.
    Add the lemon juice, add it to the mixture so that the milk curdles.
    In a pot cook the chongos until they take an amber color. Do not move them for 2 hours.
    Remove the chongos from the pot, strain and serve with a little of the liquid, add some cinnamon sticks.

    PRESENTATION

    Serve the chongos in a bowl with a little cinnamon in the slit.

    TIPS

    Rennet is normally obtained in pharmacies if you can not find it you can replace it with the juice of two lemons.

    Seguí la receta al pie de la letra pero el resultado fue menos que satisfactorio. Terminé con un dulce de leche cortada súper dulce en vez de chongos zamoranos. No recomiendo esta receta.
