Tricolor Fruit Popsicles

These delicious popsicles featuring the three colors of the Mexican flag are the perfect dessert to celebrate Mexico's Independence Day. They have a refreshing kiwi and mint layer , followed by a creamy coconut layer, and a sweet strawberry layer. You must try them!

  • 3 kiwis, cut into cubes, for the first layer
  • 1 tablespoon peppermint, for the first layer
  • 3/4 cups water, for the first layer
  • 1/4 cups sugar, for the first layer
  • 1 cup coconut milk, for the second layer
  • 1/4 cups sugar, for the second layer
  • 1 cup strawberries, without calyx, for the third layer
  • 3/4 cups water, for the third layer
  • 1/4 cups sugar, for the third layer

  • For the first layer: Combine kiwi, mint, water, and sugar in a blender and blend a homogenous mixture is obtained.
  • Pour mixture up to one-third-of the popsicle mold. Freeze for 1 hour or until firm.
  • For the second layer: Combine coconut milk with sugar in a blender and blend until smooth. Pour mixture over the first layer. Freeze until solid but make sure the popsicle stick can still be easily inserted.
  • For the third layer: Combine strawberries, water, and sugar in a blender and blend until smooth. Pour mixture over coconut layer.
  • Insert popsicle sticks and freeze 1 hour and a half or until firm.
  • Unmold tricolor fruit popsicles and serve.
