Truffe Cake

  • 100 grams unsalted butter , melted
  • 100 milliliters whipping cream
  • 100 grams sugar
  • 375 grams semisweet chocolate
  • 200 grams unsalted butter
  • 115 grams cocoa
  • 5 eggs
  • 100 grams flour
  • 50 grams nut , ground

  • Place the whipping cream in a double boiler, incorporate sugar, and mix until completely dissolved. Once dissolved, add the coffee and dissolve in the same way. When the mixture is completely ready, remove from heat.
  • Add the chopped chocolate to the previous mixture, and whisk vigorously until it melts. Once ready, add the butter and integrate. Once finished, cool and refrigerate. (Note: you must follow the steps precisely and give each ingredient time to mix; otherwise, you will not achieve the necessary consistency.)
  • In a separate bowl, beat the eggs and sugar until it reaches the ribbon stage and the foam does not deflate. Once ready, add the cocoa and flour, then the melted butter while continuing to mix, and finally incorporate the walnuts.
  • In a previously greased and floured pan, pour the mixture and bake at 180° C until a toothpick inserted comes out dry. Unmold and let cool, then cut in half and decorate with the cream made earlier.
  • If desired, sprinkle a bit of cocoa powder to enhance the flavor even more.
