Vanilla Cake with Strawberries and Whipped Cream

A really simple recipe for a vanilla cake with strawberries and whipped cream.

  • 1 cup flour
  • 3/4 cups sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoons salt
  • 4 tablespoons unsalted butter, melted
  • 1 egg
  • 1/2 cups whole milk
  • 1 teaspoon vanilla essence
  • 2 packages strawberries
  • 1 tablespoon sugar, for the whipped cream
  • 1 tablespoon icing sugar, for the whipped cream
  • 1/2 teaspoons vanilla essence, for the whipped cream
  • 1 cup whipping cream

  • Preheat the oven to 190 degrees.
  • Grease a round cake pan and flour it.
  • Mix the flour with the sugar, baking powder, and salt in a bowl.
  • Gradually add the butter, egg, milk, and vanilla until the mixture looks smooth and combined.
  • Pour the mixture into the greased round pan and bake for 25 minutes or until a toothpick inserted comes out clean.
  • Let cool for 10 minutes on a wire rack and unmold.
  • Select the best strawberries (for the top) and set aside.
  • Chop the remaining strawberries and place them in a bowl with 1 tablespoon of regular sugar.
  • Whip the cream with the powdered sugar and vanilla until peaks form. Refrigerate until ready to use.
  • Slice the cake horizontally, creating two layers of cake.
  • Pour the juices from the chopped strawberries over the two halves.
  • Take half of the whipped cream and mix it with the chopped strawberries.
  • Place one layer of cake on a platter and cover with the cream mixed with chopped strawberries.
  • Place the other layer of cake on top and cover with the remaining whipped cream.
  • Garnish with the reserved strawberries and serve.
