Vanilla Cream with Fruits

  • 1/3 cups sugar
  • 2 1/2 tablespoons corn syrup, Karo
  • 2 cups whole milk
  • 1/2 cups whipping cream
  • 2 tablespoons unsalted butter
  • 1 1/2 tablespoons vanilla essence
  • 1/2 cups peach
  • 1 tablespoon brandy
  • 1/2 tablespoons lime juice

  • In a deep bowl, mix the sugar, honey, and a pinch of salt with a whisk. Pour into a saucepan and heat over medium heat. Add the cream and milk, and continue whisking while it cooks.
  • Allow the mixture to come to a boil and continue whisking for 1 minute. Remove from heat and add the butter and vanilla, whisk until well combined.
  • Divide the cream into 4 glass cups and refrigerate for at least 1 hour and a half.
  • Just before serving, mix the fruit with the brandy and lemon juice. At the moment of serving, divide the fruit among the 4 glasses and serve.
