Vanilla Muffins with Jam

  • 2 1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2/3 cups butter, (135 gr) at room temperature
  • 1 can condensed milk, (400 gr)
  • 3 eggs
  • 1 tablespoon vanilla essence
  • 2/3 cups cow's milk
  • 3 tablespoons strawberry jam
  • 3 tablespoons blackberry jam

  • Reheat the oven to 180ºC (350ºF). Sprinkle with flour 15 molds for muffins. You can also use paper baskets.
  • In a medium bowl, mix the flour, baking powder and salt.
  • Apart, in another medium bowl, with an electric mixer beat the butter and condensed milk until the mixture becomes creamy. Add the eggs, one by one, and the vanilla essence and stir very well. Add the mixture of flours in three batches, interspersed with the milk and stir very well each time you add an ingredient, until you get a homogeneous mixture.
  • Pour the mixture into the molds of the muffins and bake 20 to 25 minutes or until you insert a knife and it comes out clean.
  • Remove the tin from the oven and let the muffins cool a little. With a spoon, open a small hole in the center of each muffin and fill it with strawberry jam and blackberry.
