Vanilla Muffins with Jam

  • 2 1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2/3 cups unsalted butter , (135 gr) at room temperature
  • 1 can condensed milk , (400 gr)
  • 3 eggs
  • 1 tablespoon vanilla essence
  • 2/3 cups cow's milk
  • 3 tablespoons strawberry jam
  • 3 tablespoons blackberry jam

  • Preheat the oven to 180ºC (350ºF). Dust 15 muffin molds with flour. You can also use paper liners.
  • In a medium bowl, mix the flour, baking powder, and salt.
  • In another medium bowl, using an electric mixer, beat the butter and sweetened condensed milk until the mixture becomes creamy. Add the eggs one by one, along with the vanilla extract, and stir very well. Gradually add the flour mixture in three batches, alternating with the milk, and stir very well each time you add an ingredient until you obtain a homogeneous mixture.
  • Pour the mixture into muffin molds and bake for 20 to 25 minutes or until you insert a knife and it comes out clean.
  • Remove the pan from the oven and let the muffins cool slightly. Using a small spoon, make a small hole in the center of each muffin and fill it with strawberry and blackberry jam.
