Vegan Ginger Cookies

  • 1/2 cups coconut oil
  • 1/4 cups sugar
  • 1/3 cups sugar
  • 2 cups flour
  • 1/2 teaspoons cinnamon
  • 1/4 teaspoons nutmeg
  • 1/4 teaspoons clove
  • 1 1/2 teaspoons ginger
  • 1/2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1/4 cups maple syrup
  • 1/4 cups almond milk
  • 1 cup icing sugar, for the icing
  • 3 tablespoons lime juice, for the icing
  • icing, red and green, for decoration

  • Preheat the oven to 180°C.
  • In a bowl, mix the coconut oil, sugar, brown sugar, and gradually add the flour, cinnamon, nutmeg, cloves, ginger, baking powder, salt, maple syrup, and almond milk, beating until combined. Wrap in cling film and refrigerate for 20 minutes.
  • Roll out the dough on a floured surface and cut with a gingerbread man and star cookie cutter.
  • Place on a baking sheet and bake for 15 minutes. Let cool and set aside.
  • For the icing: mix the powdered sugar with the lemon juice. Pour into a piping bag.
  • Decorate the cookies, let dry, and enjoy with a glass of almond milk.
