Vegetarian Bean Brownies

Delicious healthy brownie dessert made with black beans, oats, coconut oil, vanilla, sweetened with brown sugar, and topped with walnuts. This is a very nutritious dessert option packed with protein.

  • 3/4 cups black beans, cooked
  • 2 tablespoons oat flour
  • 2 tablespoons coconut oil, melted
  • 1 egg
  • 1 pinch salt
  • 1/3 cups cocoa powder
  • 1/2 teaspoons baking powder
  • 1/2 teaspoons vanilla essence
  • 1/4 cups raw sugar
  • 1/4 cups almond milk
  • 1/4 cups pecans, chopped

  • Preheat the oven to 200° C
  • Add the black beans to the processor and blend well to achieve a paste, add the oat flour, cocoa powder, salt, vanilla, sugar, egg, coconut oil, and baking powder, process for another 5 minutes until smooth and all ingredients are evenly mixed. Set aside
  • Pour the mixture into a greased and floured pan, add the walnut on top, bake for 20 minutes or until perfectly cooked and fluffy. Remove from the oven, serve, and enjoy.
