Walnut Cake with Chocolate Frosting

  • 3 cups walnuts
  • 6 tablespoons flour, Economax
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoons salt
  • 6 eggs, separated
  • 1 cup sugar, brand Hill Country Fare
  • 2 teaspoons instant coffee
  • 1 teaspoon vanilla essence, H-E-B
  • 1 1/2 cups whipping cream
  • 2 tablespoons corn syrup
  • 1 tablespoon instant coffee
  • 1 package semisweet chocolate, Turin
  • 1 teaspoon vanilla essence, H-E-B
  • walnuts, chopped for decoration

  • Grease and flour two 9-inch round pans. Preheat the oven to 180 degrees.
  • Place the egg yolks and ¾ cup of sugar in the mixer and beat until fluffy (about 10 min.). Add the vanilla and coffee.
  • Beat the egg whites in another bowl until frothy; gradually add the remaining sugar until soft peaks form.
  • Fold the walnuts with the flour, baking powder, and salt. Gently add 1/3 of the yolk mixture, then 1/3 of the egg white mixture, and continue until everything is combined.
  • Pour the mixture into the greased pans and bake for 30 minutes.
  • Let cool for 10 minutes and unmold.
  • Prepare the frosting: In a small saucepan, combine the cream, honey, coffee, and bring to a boil. Lower the heat and add the chocolate in pieces. Add the vanilla and stir, allowing everything to melt and combine.
  • Place the first cake on a platter and cover with frosting. Place the other cake on top and cover the entire cake with frosting.
