Grease and flour two 9-inch round pans. Preheat the oven to 180 degrees.
Place the egg yolks and ¾ cup of sugar in the mixer and beat until fluffy (about 10 min.). Add the vanilla and coffee.
Beat the egg whites in another bowl until frothy; gradually add the remaining sugar until soft peaks form.
Fold the walnuts with the flour, baking powder, and salt. Gently add 1/3 of the yolk mixture, then 1/3 of the egg white mixture, and continue until everything is combined.
Pour the mixture into the greased pans and bake for 30 minutes.
Let cool for 10 minutes and unmold.
Prepare the frosting: In a small saucepan, combine the cream, honey, coffee, and bring to a boil. Lower the heat and add the chocolate in pieces. Add the vanilla and stir, allowing everything to melt and combine.
Place the first cake on a platter and cover with frosting. Place the other cake on top and cover the entire cake with frosting.
