Walnut Flan

  • 1 cup sugar, for caramel
  • 1 cup pecans, for the flan
  • 1 cup cow's milk, for flan
  • 2 teaspoons vanilla essence, for flan
  • 1 cup evaporated milk, for flan
  • 2 cups cream cheese, at room temperature, for flan
  • 2 cups condensed milk, for flan
  • 8 eggs, for flan

  • Preheat the oven to 150° C.
  • In a pot over low heat, cook the sugar until it forms an amber-colored caramel without stirring to avoid crystallizing the sugar. Pour the hot caramel into a 20 cm diameter flan mold and let it dry. Grease the edges of the mold with butter and sugar and set aside.
  • For the flan, blend the walnut with milk, vanilla, evaporated milk, and cream cheese until you obtain a homogeneous mixture. Pour into a pot and heat over medium heat; meanwhile, in a bowl, beat the eggs with the condensed milk and add to the pot.
  • Cook the flan mixture for about 5 minutes, stirring constantly until you achieve a thick consistency, being careful not to overcook the eggs.
  • Pour the preparation into the mold with the caramel carefully and bake in a water bath for about 1 hour and a half or until cooked. Let it cool slightly and unmold.
  • Decorate the flan with walnuts and refrigerate for at least 2 hours before serving.
