Whole Wheat Chocolate Cupcakes

  • 1 1/2 cups whole-wheat flour
  • 1/2 cups cocoa
  • 1 teaspoon baking powder
  • 1/4 teaspoons baking soda
  • 1 teaspoon instant coffee
  • 1/4 teaspoons salt
  • 1 avocado, peeled and pitted
  • 2/3 cups maple syrup
  • 3/4 cups almond milk
  • 1/3 cups coconut oil
  • 1 teaspoon vanilla essence
  • 1/2 cups dark chocolate chips

  • Preheat the oven to 180°C.
  • Grease and flour the cupcake molds.
  • In a bowl, sift and mix the flour, cocoa, baking powder, baking soda, instant coffee, and salt. Set aside.
  • Melt the coconut oil in the microwave.
  • In a food processor, place the avocado, honey, coconut oil, almond milk, and vanilla. Process until a puree-like consistency forms.
  • Combine the mixture with the dry ingredients and chocolate chips using a spatula until it is a homogeneous mixture.
  • Pour the mixture into the previously greased cupcake molds.
  • Bake for 15 to 20 minutes. Remove from the oven and let cool for at least 20 minutes.
