Yogurt Mousse with Red Fruit Gelatin

Try this delicious and refreshing dessert that you'll love for its combination of textures. Yogurt mousse on a crunchy chocolate base, topped with homemade red fruit gelatin. The best part is that you don't need an oven to prepare it.

  • 2 cups chocolate cookies, for the base
  • 1/4 cups walnuts
  • 1/2 cups butter, melted, for the base
  • 2 tablespoons hazelnut chocolate cream
  • 1 1/2 cups yogurt, Greek
  • 1/2 cups white chocolate, melted
  • 1/2 cups icing sugar
  • 1 tablespoon vanilla essence
  • 3 envelopes unflavored gelatin powder, (7 g each) hydrated and melted
  • 1 1/2 cups whipping cream
  • 1 1/2 cups mixed berries
  • 1/2 cups sugar
  • 1 cup orange juice
  • 5 envelopes unflavored gelatin powder, (7 g each) hydrated and melted

  • candied orange, sliced for decoration

  • For the base, in a food processor, process the chocolate cookies with the nuts until you get a fine powder, mix with the butter and hazelnut cream.
  • Pour the base into a 15 cm diameter cake pan lined with parchment paper, compact it with a spoon and set aside.
  • For the mousse, whip the yogurt with the white chocolate and powdered sugar until fully combined, add the vanilla, gelatin, and continue whipping until you have a homogeneous mixture.
  • In a separate bowl, whip the cream until it doubles in volume. Gently fold it into the yogurt mixture and pour it into the mold over the cookie base, smoothing it out with a spatula.
  • Refrigerate for about 2 hours or until fully set in the Samsung Family HubTM refrigerator.
  • For the gelatin, in a pot, cook the red fruits with the sugar and orange juice until completely broken down. Strain and add the hydrated and melted gelatin, mixing very well. Cool, making sure it doesn't set.
  • Pour the red fruit gelatin over the yogurt mousse and refrigerate until set in the Samsung Family HubTM refrigerator.
  • Remove the mousse from refrigeration and carefully unmold. Decorate with red fruits and slices of crystallized orange.
