For the vanilla syrup, place the ingredients in a pot and move constantly until the sugar is diluted. Remove the syrup from the heat and let it cool completely, keep the syrup in a closed bottle for up to 1 month.
Prepare the pumpkin syrup by placing all the ingredients in a pot over medium heat. Move constantly until the mixture thickens slightly. Stir the syrup to remove the pumpkin pulp, let cool and store in a closed bottle for up to 2 weeks.
Add 1 tsp vanilla syrup to Santa Clara® Whole Milk and 1 ½ tsp pumpkin syrup.
Heat the Santa Clara® Whole Milk in the microwave for 1 minute. Pour the milk over 2 shots of espresso. Add the chantilly cream and sprinkle the spice mixture on top (cinnamon, nutmeg, ginger, pepper).
