Authentic Enfrijoladas

  • 1 cup black beans
  • water
  • 1 sprig epazote
  • 1/4 onions
  • 2 cloves garlic
  • salt
  • 1 chipotle chile in adobo sauce

  • tortillas
  • 3 cups chicken, cooked and shredded
  • sour cream
  • añejo cheese, shredded
  • onion, sliced
  • avocado, for decoration, in slices

  • For the beans: Cook the beans, water, epazote, onion, and garlic in a pressure cooker for 50 minutes, starting from when the valve sounds.
  • Once ready, they can be used for the enfrijoladas. Blend them with a little salt and chipotle chili.
  • Heat a pot over medium heat, pour in some oil and the ground beans, and cook for 5 minutes or until the mixture thickens a bit. Finally, season with salt if necessary. Reserve.
  • Heat a skillet, add a little vegetable oil, and soften the tortillas by passing them through it; remove the excess oil.
  • Fill the tortillas with the chicken and pour the bean sauce over them.
  • Decorate the enfrijoladas with cream, cheese, red onion, and avocado.
