Beef Stew with Vegetables

  • 1 kilo beef tenderloin, cut into tips
  • 2 tablespoons coarse salt
  • 1/2 tablespoons oregano
  • 1/2 tablespoons onion powder
  • 1/2 tablespoons black pepper
  • 1/2 tablespoons dried thyme
  • 1/3 cups flour
  • vegetable oil
  • 3 cloves garlic
  • 1 cup onion, finely chopped
  • 6 tablespoons tomato paste
  • 4 potatoes, cut into medium cubes
  • 3 carrots, cut into medium cubes
  • 2 tablespoons Worcestershire sauce
  • 1 cup beef broth
  • 1 leaf bay
  • 1/2 cups peas
  • 1 cup celery, thin slices
  • salt
  • pepper
  • parsley, finely chopped, for garnish
  • Zuko® hibiscus Mexican cooler, to accompany

  • In a bowl, mix the flour with salt, oregano, onion powder, black pepper, and thyme until the ingredients are combined. Add the meat and coat it perfectly with the mixture.
  • Heat oil in a pot and sear the meat for 5 minutes. Add the onion and garlic, and fry for 5 more minutes.
  • Add the tomato paste and mix. Then add the carrot, potato, celery, Worcestershire sauce, beef broth, and bay leaf. Cover the pot and cook for 30 minutes, or until the meat and vegetables are tender.
  • Add the peas, season with salt and pepper, and cook for 2 minutes.
  • Serve in a deep plate, garnish with parsley, and accompany with a Zuko® Jamaica flavored drink.
