  • 2 cups chayote, peeled and in medium cubes
  • water
  • salt
  • 1 cup lime juice
  • salt
  • pepper
  • 1/2 cups onion, in small cubes
  • 1 cup cucumber, in small cubes
  • 1 cup tomato, in small cubes
  • 1/4 cups serrano chile, in slices
  • 1/2 cups cilantro, finely chopped
  • serrano chile, in thin slices, for garnish
  • cilantro leaves
  • avocado, for garnish

  • Cook the chayote in a pot with enough water and salt for 5 minutes. Remove from the pot, strain, and let cool.
  • In a bowl, mix the lime juice, salt, and pepper. Add the chayote, red onion, cucumber, tomato, serrano pepper, and cilantro. Mix well.
  • Serve the ceviche in a bowl and garnish with serrano pepper, cilantro leaves, and avocado.
