Chicken Milanesa Tacos

  • 3 San Juan® eggs
  • 1 tablespoon mustard
  • salt and pepper
  • 1/2 cups cow's milk
  • 500 grams chicken cutlet
  • breadcrumbs
  • vegetable oil, for frying
  • 3 tomatoes, in halves, for the red salsa
  • 3 serrano chiles, for the red salsa
  • 1 garlic, for the red salsa
  • coarse salt, for the red salsa
  • 1 tablespoon fresh cilantro, finely chopped, for the salsa
  • corn tortillas
  • 1 cup refried beans
  • fresh cilantro, for decoration
  • lime, for serving

  • In a bowl, crack the San Juan® eggs and lightly beat with mustard, salt, pepper, and milk.
  • Bread the milanesa by dipping it in the egg mixture and then in the breadcrumbs.
  • In a skillet over medium heat, heat the oil and fry the milanesa on both sides until golden. Drain on paper towels.
  • On a cutting board, cut the milanesa into strips. Set aside.
  • For the salsa, on a griddle over medium heat, roast the tomatoes, chiles, and garlic.
  • Mash the roasted garlic with a little coarse salt until you get a puree. Add the chiles, the tomatoes, and continue mashing until you get a salsa. Adjust the seasoning and add the cilantro.
  • Heat the tortillas on a griddle and spread with refried beans.
  • Serve the strips of milanesa over the tortillas, garnish with cilantro, and serve with salsa and lime.
