Chicken Stuffed Avocado

Prepare this recipe for avocado stuffed with chicken and vegetable salad. It is an easy and healthy dish to make that will get you out of any bind. You just need to mix all the ingredients!

1 cup carrot, cooked and diced
1/2 cups peas
2 tablespoons mustard
2 tablespoons sour cream
1/4 cups red onion, finely chopped
2 cups chicken breast, cooked and shredded
2 avocados
salt
pepper
cilantro, for decoration
Preparation

Place cooked and chopped carrot, pre-cooked peas, mustard, cream, and red onion in a bowl and mix well.
Add the shredded chicken and continue mixing until all the ingredients are combined.
Take an avocado, cut it in half, and remove the skin to leave only the pulp.
Open the avocado, remove a bit of the center pulp, and place the filling.
Season with salt and pepper to taste. Decorate with a bit of cilantro and olive oil.
