  • 4 Poblano chiles, roasted, seedless
  • 1/2 cups panela cheese , in strips
  • 1/2 cups asadero cheese , in strips
  • 5 tomatoes
  • 1/2 onions
  • 3 serrano chiles
  • 2 cups chicken broth
  • vegetable oil
  • salt and pepper

  • Roast the tomato, onion, garlic, and serrano chile on a griddle until all ingredients are well roasted.
  • Blend the roasted ingredients with the chicken broth, salt, and pepper.
  • Pour the tomato broth into a pot with hot oil.
  • Stuff the chiles with the cheeses and close with a toothpick. Add the chiles to the broth and cook for 10 minutes.
