  • 1/4 onions
  • 1 clove garlic
  • 2 tomatoes, in quarters
  • 6 guajillo chiles
  • 4 morita chiles
  • 1 cup chicken broth
  • salt and pepper
  • vegetable oil
  • 2 cups nopal, cooked
  • 8 eggs
  • refried beans
  • tortilla chips

  • Cook the onion, garlic, tomatoes, guajillo chiles, and morita chiles in a pot with enough water for 10 minutes or until all the ingredients are soft.
  • Blend the ingredients with chicken broth, salt, and pepper until you obtain a sauce.
  • Cook the sauce in a pot with a little oil for 5 minutes. Add the nopales and cook for 5 more minutes.
  • Crack the eggs one by one and place them directly in the sauce. Cover and cook on low heat for 5 minutes or until the eggs are cooked.
  • Serve and accompany with beans and tortilla chips.
