Enchiladas Gratin

Prepare this delicious enchiladas gratin recipe, the whole family will love it! You only need tortillas, chicken, cheese, poblano pepper, garlic, cilantro, and onion.

  • 1 cup Poblano chile strips
  • 1 cup cream cheese, cut into cubes
  • 2 cups evaporated milk
  • 1 tablespoon garlic powder
  • salt

  • 1 Roasted chicken
  • 8 corn tortillas
  • 1 cup Manchego cheese, grated
  • cilantro, leaves, for decoration
  • red onion, Sliced, for decoration

  • Blend the strips of poblano pepper, cream cheese, evaporated milk, garlic powder, salt, and pepper.
  • Shred the roasted chicken using your hands or two forks.
  • Fill the tortillas with the chicken and place them in a baking dish, pour the sauce over them and sprinkle with manchego cheese. Heat in the microwave for 3 minutes to melt the cheese.
  • Garnish with cilantro and red onion. Enjoy.
