  • 2 tablespoons butter
  • 1/2 cups onion, finely chopped
  • 1 tablespoon serrano chile, finely chopped
  • 2 cups whole black beans
  • salt
  • 1 baguette, in half
  • 6 slices deli ham
  • 6 slices Manchego cheese
  • 1/2 cups red onion, finely chopped
  • 1 cup tomato, in small cubes
  • 2 cups pineapple, grilled, in small cubes
  • 1 tablespoon Jalapeño chile, in small cubes
  • salt
  • 1 tablespoon cilantro, finely chopped

  • Melt the butter in a skillet over medium heat and add the onion and chili. Cook for 5 minutes or until browned. Incorporate the beans, cook for 2 minutes, and mash. Set aside.
  • Spread the bread with the refried beans and then add ham and cheese. Transfer to a baking tray and bake at 200 °C for 10 minutes.
  • For the pico de gallo: mix the onion, tomato, pineapple, jalapeño, salt, and cilantro in a bowl. Set aside.
  • Serve the Hawaiian molletes and accompany with pico de gallo.
