Heat the milk in a pot over low heat for 10 minutes.
Remove from heat and add the lemon juice. Let it rest for 30 minutes so the whey separates from the milk.
Place a strainer and a cheesecloth over a bowl, pour everything from the pot.
Let it drain very well and with the help of your hands, remove all the excess liquid, leaving only the solid part.
Blend with the help of a processor or hand blender until you have a smooth and creamy consistency. Season with salt and place in a sterilized glass container.
