Heat the milk in a pot over medium heat and add salt. Pour in the vinegar, lower the heat, and cook for 10 minutes; you will notice that it starts to curdle.
Cook until boiling, stir, and check that the milk has separated. Remove from heat and let it rest for 10 minutes.
To separate the whey from the cheese, place a strainer over a bowl and cover it with a cheesecloth. Add the cheese and squeeze to remove excess whey.
Shape the cheese in a mold and compress it.
