Molletes with chorizo

  • Sauté the onion in a saucepan, add the beans, and mash. Cook over low heat for 5 minutes.
  • Brown the chorizo in a pan over medium heat for 2 minutes and remove. Place on absorbent paper to remove excess oil.
  • Cut a bolillo in half, spread butter on both sides, and place on a griddle over low heat to slightly melt the butter without burning it.
  • Spread beans on the bolillos with butter, add manchego cheese.
  • Broil in the oven for 5 minutes or until the cheese has melted.
  • Serve and accompany with avocado and pico de gallo.
