Pupusas

Salvadoran pupusas are a typical dish from this country, which also originates from other Central American countries, adapting different ingredients to their recipes.   • 4 tomatoes, for the sauce
  • 1 cuaresmeño chile, for the sauce
  • 1/4 red onions, for the sauce
  • 4 árbol chiles, cleaned without seeds, for the sauce
  • 1 teaspoon oregano, for the sauce

  • 1/4 cabbages, sliced, for the pickling
  • 1 cup red onion, sliced, for the pickling
  • 1/2 cups cuaresmeño chile, sliced, for the pickling
  • 1 1/2 cups carrot, grated, for the pickling
  • 1 teaspoon oregano, for the pickling
  • salt, for the pickling
  • 1/2 cups apple cider vinegar, for the pickling
  • 1 cup refried beans
  • 1 cup cheese
  • 1/2 kilos masa dough, prepared with salt and water.

  • In a pot with boiling water, cook the tomatoes, the piece of cuaresmeño pepper, the red onion, and the árbol chili for 5 minutes. Remove from heat and let cool for a few minutes.
  • Grind the ingredients you boiled along with the teaspoon of oregano, season with a little salt.
  • In a skillet, fry the sauce over medium heat for 5 minutes.
  • In a bowl, mix the cabbage, red onion, cuaresmeño pepper, carrot, oregano, salt, apple cider vinegar, and warm water. Let sit for 10 minutes.
  • Mix the grated cheese with the refried beans.
  • For the pupusas, take a portion of masa and form a ball, hollow out the middle and flatten a bit on the sides; fill with beans and cheese, close and flatten into a circular shape.
  • On a hot comal over medium heat, cook the pupusas for 10 minutes.
  • Serve the pupusas accompanied by sauce and vegetable pickles.
