Rice noodles with meat and vegetables

This rice noodle recipe is perfect for taking to work, as you only need to add hot water to the mason jar and you'll have a delicious noodle soup with shredded meat and vegetables. More practical, impossible! Plus, it's healthy and high in protein.

  • 1/2 cups beef, shredded
  • 1/4 cups broccoli, in small florets
  • 1/4 cups pumpkin, in cubes
  • 2 tablespoons yellow corn
  • 2 tablespoons peas
  • salt
  • pepper
  • 1/4 teaspoons vegetable consommé, powder
  • water, hot
  • lime, to accompany

  • In a mason jar, place the rice noodles, shredded meat, broccoli, zucchini, corn, peas, salt, pepper, vegetable bouillon powder, and hot water.
  • Heat in the microwave for 4 minutes, garnish with green onions and enjoy.
