  • 1 kilo tomatillo, for the sauce
  • 5 serrano chiles, for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1 sprig cilantro, for the sauce
  • 1 cup sour cream, for the sauce
  • 1/4 cups chicken broth, for the sauce
  • 1 tablespoon vegetable oil

  • 2 tablespoons vegetable oil
  • 8 corn tortillas
  • 2 cups chicken breast, shredded
  • 1 cup Manchego cheese
  • sour cream, for decoration

  • Cook the tomatoes and chiles in a pot with enough water until they are cooked.
  • Blend the tomatoes and chiles with the onion, garlic clove, cilantro, sour cream, and chicken broth until you obtain a sauce.
  • Heat the oil in a pot, pour in the sauce, and cook for 3 minutes.
  • Pour the oil into a pan over medium heat, lightly fry the tortillas, fill with chicken, roll up, and place in a baking dish.
  • Pour the sauce over the enchiladas, sprinkle with cheese, and bake for 5 minutes or until the cheese is melted.
  • Serve the green Swiss enchiladas with a little cream.
