  • 500 grams tamarind pulp, without skin and seeds
  • 1/2 cups water
  • 3 cups sugar
  • 3 tablespoons chile powder
  • 1/2 teaspoons salt

  • Add the tamarind pulp, water, sugar, chili powder, and salt to a pot. Cook for 5 minutes or until the tamarind dissolves. Once dissolved, cook for an additional 5 to 8 minutes or until it thickens. Remove and place on a tray lined with wax paper and let cool.
  • Shape the tamarind into balls with your hands and then roll them in sugar or chili powder.
  • Serve the tamarind tarugos in a basket with crepe paper and enjoy.
