Traditional Esquites

Prepare some delicious boiled esquites with the traditional toppings of mayonnaise, lime, and chili. They are sautéed in lard and boiled with serrano chili and epazote, giving them an unmatched flavor.

  • 2 tablespoons lard
  • 1/4 onions, finely chopped
  • 1 clove garlic, finely chopped
  • 2 árbol chiles
  • 4 cups corn kernels
  • 1 liter water
  • 3 sprigs epazote

  • queso fresco, crumbled
  • piquín chile
  • lime juice

  • In a skillet, heat the oil and sauté the onion, add the garlic, the árbol chiles, and lightly fry.
  • Add the corn kernels, water, and epazote; season with salt and pepper, and cook for 30 minutes, or until the corn kernels are tender.
  • Serve in clay pots, accompanied by mayonnaise, fresh cheese, piquín chili, and lime.
