3 serrano chiles, without stem, for the green salsa

For the red salsa: Roast the onion, garlic, serrano pepper, and tomato on a hot griddle until the skin darkens, making sure to move constantly. Remove from heat once roasted.
Place the roasted onion and garlic in a molcajete, add sea salt, and grind until you obtain a puree. Incorporate the tomato and chilies and finish grinding, you can add a little water if desired. In the end, you should obtain a semi-thick salsa. Set aside.
For the green salsa: Cook the tomatillos and serrano pepper in a pot with enough water until soft. Remove from heat and blend with the onion, garlic, cilantro, salt, and pepper. Set aside until used.
For the dough: Mix the corn dough, lard, salt, and enough water in a bowl, then knead until you obtain a manageable dough.
Take a small amount of prepared corn dough (what your fingers can hold) and form a ball the size of a ping pong ball, use a tortilla press to flatten it, place it on a hot griddle and cook on both sides until ready. Remove from heat and, while still hot, pinch the edge of the tortilla using a napkin. Repeat until all the dough is used.
Place the picaditas on the griddle, add a little lard, and add green or red salsa to taste. Then add onion and aged cheese. Enjoy hot!
