  • 2 kilos pork, thinly chopped but not too small
  • 2 packages corn tortillas, yellow
  • 120 grams achiote
  • 1 1/2 cups orange juice
  • 7 leaves bay
  • 1 tablespoon thyme
  • 1 tablespoon marjoram
  • 1 tablespoon oregano
  • 1 tablespoon ground cumin
  • 6 pepper, fat chilies
  • 6 cloves
  • 3 red chili powder
  • 2 pasilla chiles
  • 4 árbol chiles
  • 6 garlic
  • fresh cilantro, finely chopped
  • 10 limes
  • 125 grams lard
  • salt, to taste
  • 2 onions, finely chopped

  • Blend the Achiote, orange juice, bay leaf, thyme, marjoram, oregano, cumin, allspice, cloves, salt, garlic, and chilies very well
  • in a large bowl with a lid, combine the ground meat with the contents of the blender without straining (it should be a very fine paste) and let marinate for 12 hours in refrigeration
  • heat a skillet with 3 tablespoons of lard and brown the meat to your liking (very browned or just cooked)
  • heat the tortillas on a griddle, soak them in a little lard, and keep them together so they don't cool down and become hard
  • serve on two tortillas with a teaspoon of meat, topped with cilantro, chopped onion, and lime
  • serve with salsa, each portion is four tacos, and enjoy
