To make the dough, start by mixing the flour, salt, sugar, and butter in an electric mixer for just 2 minutes.
In a deep bowl, mix the eggs and milk and add to the flour mixture, beating for just 1 more minute.
Place your dough on a clean, floured surface and knead with your hands until all the butter is incorporated. Gather the dough into a ball, cover with plastic wrap, and refrigerate for 1 hour.
Remove the dough from the refrigerator and roll it out with a rolling pin and flour until you have a circle slightly larger than the size of your quiche or pie dish. Place the dough in the dish, cover with parchment paper, and place beans on the paper to prevent the dough from puffing up while baking.
Bake the dough in an oven at 160 degrees Celsius for 40 - 45 minutes or until lightly golden underneath. Tip: If the edges start to burn, cover with aluminum foil to protect them.
To make the filling, in a deep bowl, beat the egg, cream, milk, nutmeg, and season with salt and pepper.
Place the asparagus and goat cheese on the dough and cover with the egg filling.
Bake the quiche for 40-45 minutes in the oven at 160 degrees Celsius. Remove from the oven and allow to cool before slicing.
