Banana Empanadas with Chipotle Peanut Sauce

  • 1 cup vegetable oil
  • 2 plantains, ripe, chopped
  • 1/4 cups onion, chopped
  • 1 clove garlic
  • 1 cup Mozzarella cheese
  • 1/2 cups fresh cilantro, finely chopped
  • 1/4 cups peanut butter, sugar-free
  • 1/4 cups mayonnaise
  • 1/4 cups orange juice
  • 2 tablespoons chipotle chile in adobo sauce, chopped

  • Heat 1 tsp. of oil in a large non-stick skillet over medium heat. Add the bananas, onions, and garlic; cook for 5 minutes or until the bananas are nicely browned, stirring frequently. Let them cool slightly. Stir in the cheese and half of the cilantro.
  • Add approximately 1/4 cup of the banana mixture in the center of each disc; moisten the edges with water. Fold the discs in half to enclose the filling; press them slightly on top to remove any air pockets. Seal the edges with a fork.
  • Heat the remaining oil in a medium-sized deep skillet. Add 4 empanadas; cook for 4 to 5 minutes or until golden brown on both sides, turning them after 3 minutes. Drain them on paper towels. Repeat the process with the remaining empanadas. Let them cool.
  • Mix the peanut butter, mayonnaise, juice, chiles, and the remaining cilantro well. Serve the empanadas with this sauce.
