Basket Tacos

Basket tacos are very tasty and simple to make. Dare to cook them and you will see how delicious they are.

  • 1 kilo tortillas, small and thin
  • 2 potatoes, medium, cooked and peeled
  • 50 grams mole paste, in paste
  • 2 cups chicken broth
  • 1 chicken breast , cooked and shredded
  • 1 cup refried beans
  • 2 tablespoons oil , for frying

  • Mash the potatoes until smooth, season with salt, and heat in a pan over low heat.
  • Mix the mole with the broth and stir until it dissolves, add the chicken, and cook until it thickens; adjust seasoning.
  • Heat a griddle lightly brushed with oil and warm the tortillas without allowing them to toast.
  • Fill 1/3 of the tortillas with beans, another third with potatoes, and another third with green mole; fold them in half like quesadillas.
  • Place the tacos in a basket lined inside with plastic and covered with a clean cloth to steam and keep warm.
