Brie Cheese Fondue

A rich fondue made with brie cheese, white wine, and fresh thyme.

  • 500 grams Brie cheese, without rind, cubed
  • 2 tablespoons unsalted butter
  • 1/4 cups shallot, finely chopped
  • 1/2 cups white wine, Chardonnay type
  • 2 tablespoons fresh thyme, chopped
  • 1 pinch salt
  • 1 pinch pepper
  • 2 french country bread, or baguette, cubed
  • 2 green apples, cubed (with a few drops of lemon)

  • Melt the butter in a medium pot over medium heat. Add the shallots and cook until translucent, about 3 minutes.
  • Add the white wine, 1/4 cup of water, and allow it to boil.
  • Add the brie cheese and mix with a whisk until melted (about 2-3 minutes). Add the thyme, salt, and pepper.
  • Transfer the fondue to a fondue pot (like the one in the photo) and serve with rustic bread and apple.
