500 grams Brie cheese, without rind, cubed
2 tablespoons unsalted butter
1/4 cups shallot, finely chopped
1/2 cups white wine, Chardonnay type
2 tablespoons fresh thyme, chopped
1 pinch salt
1 pinch pepper
2 french country bread, or baguette, cubed
2 green apples, cubed (with a few drops of lemon)

Melt the butter in a medium pot over medium heat. Add the shallots and cook until translucent, about 3 minutes.
Add the white wine, 1/4 cup of water, and allow it to boil.
Add the brie cheese and mix with a whisk until melted (about 2-3 minutes). Add the thyme, salt, and pepper.
Transfer the fondue to a fondue pot (like the one in the photo) and serve with rustic bread and apple.
