Brie Cheese in Puff Pastry with Apricot Jam

This appetizer of brie cheese wrapped in puff pastry is filled with apricot jam, almonds, and dried cranberries. The combination of flavors is exquisite.

  • 1 Brie cheese, round
  • 1 egg
  • 1 tablespoon water
  • 500 grams puff pastry
  • 1/2 cups apricot jam, or raspberry
  • 1/4 cups almonds
  • 1/3 cups cranberries
  • flour

  • Preheat the oven to 200 degrees Celsius.
  • Roll out the puff pastry on a flat surface with a little flour. Form a square large enough to wrap the brie cheese.
  • Mix the tablespoon of water with the egg in a small cup and set aside.
  • Mix the apricot jam (or raspberry) with the sliced or slivered almonds and the dried cranberries.
  • Lightly mark the circle of the brie on the puff pastry and fill with the jam mixture.
  • Remove the white layer from the top of the brie cheese with a knife on one side.
  • Place the cheese with the cut side on top of the jam.
  • Wrap in the puff pastry and turn it over.
  • Decorate the smooth side with pieces of puff pastry cut out with a cookie cutter.
  • Brush everything with the egg mixed with water.
  • Place on a baking sheet and put in the oven for 20 minutes until golden brown.
  • Let rest for about 15 minutes before serving.
