Broccoli Frittata with Goat Cheese and Parsley Oil

  • 5 tablespoons olive oil
  • 1/2 red onions, chopped
  • 1/2 broccoli, cut into small florets
  • 75 milliliters white wine
  • 4 eggs
  • 1 pinch pepper
  • 1 pinch salt
  • 100 grams goat cheese
  • 2 tomatoes, sliced
  • 3 tablespoons parsley, chopped

  • Preheat the oven to 200 degrees Celsius
  • Heat the oil in a baking pan and fry the broccoli florets until softened along with the onion.
  • Add the white wine and wait for it to evaporate completely.
  • Beat the eggs and add to the hot pan, seasoning to taste with salt and pepper. Cook for 2 or 3 minutes or until the eggs have set. Place the goat cheese and tomatoes on top of the eggs and transfer to the oven for 4 or 5 minutes or until the cheese melts or the eggs are well cooked.
  • For the parsley oil, add the oil, salt, pepper, and parsley to a food processor. Blend.
