Heat the oil in a baking pan and fry the broccoli florets until softened along with the onion.
Add the white wine and wait for it to evaporate completely.
Beat the eggs and add to the hot pan, seasoning to taste with salt and pepper. Cook for 2 or 3 minutes or until the eggs have set. Place the goat cheese and tomatoes on top of the eggs and transfer to the oven for 4 or 5 minutes or until the cheese melts or the eggs are well cooked.
For the parsley oil, add the oil, salt, pepper, and parsley to a food processor. Blend.
