Blinis with Caviar

An excellent appetizer/snack for your elegant dinners and meals.

  • 1 can salmon caviar

  • In a deep bowl, mix the yeast and hot water and let it sit for 5 minutes for the yeast to activate.
  • Add the milk and melted butter.
  • Add the flour, salt, and mix until you have a smooth batter.
  • Cover the dough and let it rise at room temperature for approximately 2 hours.
  • When the dough has risen, add the buttermilk and the beaten egg whites.
  • Heat a skillet and coat it with PAM (or any cooking spray) to prepare it for making the pancakes.
  • Add a tablespoon of the batter to the skillet and cook until golden on one side, then flip and let the other side also brown.
  • Remove from the pan and let the blinis cool.
  • To serve, take a blini, put a tablespoon of cream and a teaspoon of caviar on top.
