Preparation
In a deep bowl, mix the yeast and hot water and let stand for 5 minutes for the yeast to act.
Add melted milk and butter.
Add the flour, salt and mix until you get a uniform dough.
Cover the dough to allow it to grow at room temperature for approximately 2 hours.
When the dough has grown, add the buttermilk and the beaten egg whites until stiff.
Heat a pan and cover with PAM (or any vegetable spray) to prepare it to make the pancakes.
Add a tablespoon of the dough to the pan and cook until golden brown on one side, then turn over and let the other side also brown.
Remove from the pan and allow the blinis to cool.
To serve take an blini, put a spoonful of cream and a teaspoon of caviar on top.
