Pancetta, Peas, and Cherry Bruschetta

  • 100 grams pork belly, smoked
  • 150 grams cherry tomato
  • pastis
  • 100 grams vetch
  • 4 slices multigrain bread, field
  • 4 fontina cheeses, slices
  • 2 eggs
  • olive oil
  • 200 grams mixed lettuce
  • table salt
  • black pepper powder

  • Cut the pancetta into strips.
  • Brown in a pan, allowing it to render slowly.
  • Add the cherry tomatoes to the pan and turn the heat up to maximum.
  • Cook until they start to burn.
  • Add the peas, sauté for 1 more minute.
  • Deglaze with pastis.
  • Toast each slice of bread with a slice of fontina in the toaster in a vertical position or in an electric oven.
  • Cook the soft-boiled eggs (in their shells, in water, for 7 minutes).
  • Clean the lettuce leaves and make a salad.
  • Serve the bruschetta by placing the toast with melted cheese on top, with the sautéed pancetta, peas, and cherry tomatoes.
  • Serve with a green leaf salad.
