Smoked Salmon Crepe Rolls

Prepare these smoked salmon rolls with cream cheese and chives, they will be a hit at your gatherings. You can replace the smoked salmon with trout if you prefer.

1 1/2 cups cow's milk
1 cup flour
2 eggs
1 tablespoon vegetable oil
1/4 teaspoons salt
350 grams smoked salmon
50 grams cream cheese
2 tablespoons chives, chopped
3/4 cups arugula

In a blender, combine milk, flour, eggs, oil, and salt. Blend well.
Heat a round pan with a few drops of oil (you can spread it around the pan with a paper towel to prevent it from being greasy).
Pour a little of the mixture into the pan, ensuring it covers the entire pan, and let it cook for about 45 seconds until browned underneath.
Repeat the same process with the entire mixture.
Place the cream cheese in a bowl and mix with 2 tablespoons of lemon juice. Add the chopped chives and stir.
Spread the prepared cream cheese on the crepes, then add a layer of smoked salmon and arugula leaves. Roll them up.
Cut the crepes into thick slices and place them on a serving platter.
Garnish the rolls with an arugula leaf and serve.
