Carrot and Pumpkin Croquettes

Delicious nutritious pumpkin and carrot croquettes with a melted manchego cheese center. The perfect option for a very fresh and light snack, ideal for sharing at a gathering with your favorite people. Don't forget to dip your croquettes in the avocado and habanero sauce. Incredible.

  • 2 tablespoons butter
  • 1 clove garlic, finely chopped
  • 1 onion, finely chopped
  • 2 carrots, grated
  • 2 pumpkins, grated
  • 1 cup potato, cooked, mashed
  • 2 cups Manchego cheese, grated
  • 1 bunch fresh cilantro
  • 1 egg
  • 1/2 cups flour
  • 1/2 cups breadcrumbs
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup flour, for breading
  • 2 eggs, beaten for breading
  • 2 cups breadcrumbs, for breading
  • 1/2 cups parsley, chopped for breading
  • 1/2 cups fresh cilantro, chopped for breading
  • 1 cup vegetable oil, for frying
  • 1 cup lettuce, for garnish
  • 3 limes

  • Heat a skillet over medium heat, add the butter, garlic, onion, carrot, pumpkin, and potato, mix very well. Season.
  • In a bowl, add the mixture with the manchego cheese, cilantro, egg, flour, breadcrumbs, season, and form the croquettes. Set aside.
  • In a bowl with the flour, add the croquettes, remove the excess, then dip in the egg and finally in breadcrumbs combined with parsley and cilantro.
  • Fry with the oil and serve on lettuce leaves with lime.
