Take a slice of bread, place 2 slices of manchego cheese on top, and cover with another slice of bread. Repeat this with the 3 sandwiches.
Cook the sandwich in the skillet using a wooden spatula to press it down while cooking. The secret to this recipe is to cook the sandwich very well so that the cheese becomes very melted.
Cook for about 5 minutes on each side and remove from the skillet, serve.
