Cut the cheese into triangular portions about 1 centimeter thick.
Place whole wheat breadcrumbs in one container and in another, place the 6 previously beaten egg whites.
Soak your cheese triangles in the egg and quickly in the breadcrumbs until fully coated, repeat 2 more times until there are no gaps left to cover.
In a pan a bit deeper than your cheese portions, heat 2 cups of olive oil and carefully place your triangles, turning them until you see they are golden on both sides.
Let cool on absorbent paper.
Cook your tomatoes in boiling water, remove the skins, and place them in the blender along with the 2 teaspoons of oil and your spices (Basil, pepper, salt, garlic, onion, and bay leaf).
Place your tomato sauce and its blended ingredients in a small pot and let it boil.
Ready, you have your cheese triangles with homemade sauce ready for your lunch.
